Instructions
- Heat water to 204°F/96°C
- Grind coffee to medium (Fellow Ode or Opus Grinder Setting of 4-6)
- Place C70 filter in brewer and rinse with hot water
- Add coffee grounds and create a small well
- Start with 60 gram bloom pour, wait 30 seconds
- At 30 seconds: Add 60 grams of water in circular motion, don't touch edges
- At 1:00: Add 40 grams of water in circular motion
- At 1:30: Add 40 grams of water in circular motion
- At 1:45: Add 40 grams of water, straight pour down center
- At 2:00: Add 40 grams of water, straight pour down center
- At 2:15: Add 35 grams of water, straight pour down center
- Total brew time should be 3:30 (3 minutes 30 seconds)
Tips
Total brew time should be 3-4 minutes. The 70° filter increases clarity, allows delicate nuanced flavors to prevail, provides higher extraction yields, and offers thermal stability for a piping hot cup.
